Ingredients

2 cups fresh broccoli florets

1 cup cooked ham, diced

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

6 large eggs

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika (optional)

1 cup diced hash browns (frozen or fresh)

Fresh parsley (optional, for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x13-inch baking dish by greasing it with cooking spray or a thin layer of butter to prevent sticking.

Prepare the Broccoli: Bring a pot of water to a rolling boil. Add the broccoli florets and blanch them for 2-3 minutes, until they turn bright green and become slightly tender. Immediately transfer the broccoli to a bowl filled with ice water to halt the cooking process. Once cooled, drain the broccoli well and set it aside.

Mix the Ingredients: In a large mixing bowl, crack the eggs and whisk them together with the milk, garlic powder, onion powder, salt, black pepper, and optional paprika. Be sure to mix until the ingredients are fully combined and well-blended.

Layer the Bake: Evenly spread the diced hash browns in a single layer at the bottom of the greased baking dish. Follow this with an even layer of blanched broccoli and diced ham, distributing them uniformly. Finally, sprinkle both the cheddar and Monterey Jack cheeses over the broccoli and ham.

Pour the Egg Mixture: Carefully pour the egg mixture over the layered ingredients in the baking dish. Make sure to distribute it evenly, gently pressing down on any ingredients that may rise to the surface.

Bake: Place the baking dish in the preheated oven and bake for about 35-40 minutes. The breakfast bake is done when the egg is set and the top is a beautiful golden brown. To check for doneness, insert a knife in the center; it should come out clean.

Cool and Garnish: After baking, carefully remove the dish from the oven and let it cool for approximately 5 minutes. If desired, garnish with freshly chopped parsley for a pop of color and freshness.

Serve: Cut the breakfast bake into squares and serve warm. This delightful dish pairs splendidly with a side of fresh fruit or a light salad for a balanced meal.
