Ingredients

1 lb ground beef

1 cup long-grain white rice, rinsed until water runs clear

1 medium onion, finely diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, undrained

2 cups beef broth (low-sodium preferred)

1 cup shredded sharp cheddar cheese

1 teaspoon paprika

1 teaspoon ground cumin

½ teaspoon salt (or to taste)

½ teaspoon freshly ground black pepper

1 cup frozen corn (optional, but recommended for sweetness)

Fresh parsley, chopped (for garnish)

Instructions

Brown the Beef: In a large skillet over medium-high heat, add the ground beef. Cook, stirring occasionally and breaking it apart with a wooden spoon, until the beef is browned and cooked through, about 5-7 minutes. If there is excess fat, drain it off carefully.

Sauté Aromatics: To the skillet, add the finely diced onion and minced garlic. Sauté for about 3-4 minutes until the onion is soft and translucent, stirring frequently to prevent sticking.

Add Rice and Seasonings: Incorporate the rinsed rice, along with paprika, cumin, salt, and black pepper. Stir well to coat the rice with the spices, toasting it slightly in the skillet for about 1-2 minutes to enhance the flavors.

Combine Other Ingredients: Pour in the undrained canned diced tomatoes and the beef broth. If you are including frozen corn, add it at this point. Stir the mixture thoroughly to ensure even distribution of ingredients.

Simmer: Increase the heat to bring the mixture to a boil. Once boiling, reduce the heat to low, cover the skillet with a lid, and let it simmer gently for about 20 minutes, or until the rice is tender and has absorbed most of the liquid.

Add Cheese: Remove the lid from the skillet and sprinkle the shredded sharp cheddar cheese evenly over the top. Cover the skillet again and allow the cheese to melt for about 2-3 minutes, creating a lovely cheesy topping.

Serve: Once the cheese is melted, remove the skillet from heat. To finish, garnish with freshly chopped parsley for a fresh pop of color and flavor before plating.
