Ingredients

2 cups elbow macaroni

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) chili (choose your heat level: mild or spicy)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup milk

1/4 cup sour cream

1 teaspoon chili powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Cooking spray or muffin tin liners

Optional toppings: diced green onions, jalapeño slices, crushed tortilla chips

Instructions

Preheat Oven:

Begin by preheating your oven to 350°F (175°C). Prepare a standard muffin tin by either greasing it with cooking spray or lining each cup with muffin liners to prevent sticking.

      Cook Pasta:

In a large pot, bring a generous amount of salted water to a rolling boil. Add the elbow macaroni and cook according to the package instructions until they are al dente. Once cooked, drain the pasta in a colander and set aside to cool slightly.

          Mix Ingredients:

In a spacious mixing bowl, combine the cooked macaroni, rinsed kidney beans, your choice of chili, shredded sharp cheddar, shredded mozzarella, milk, sour cream, chili powder, garlic powder, onion powder, and a pinch of salt and pepper. Using a large spoon or spatula, stir thoroughly until all ingredients are uniformly mixed together.

              Fill Muffin Tins:

Using a ladle or spoon, carefully spoon the chili mac mixture into each muffin cup, filling them to the top. To ensure even cooking and a compact texture, gently press down on the mixture with a spatula.

                  Bake:

Place the filled muffin tin into your preheated oven. Bake for approximately 20-25 minutes, or until the tops are golden brown and the cheese is oozing and bubbly.

                      Cool and Serve:

Once baked, carefully remove the muffin tin from the oven and allow it to cool for about 5 minutes. Gently lift the Cheesy Chili Mac Muffins from the tin, and serve warm. For an extra burst of flavor, garnish with optional toppings such as diced green onions, fresh jalapeño slices, or a sprinkle of crushed tortilla chips.

Prep Time: 15 minutes | Total Time: 40 minutes | Servings: 12 muffins

Presentation Tips: Serve the muffins on a rustic wooden board for a charming touch. A small bowl of extra chili on the side allows guests to dip or drizzle for added flavor!
