2 cups cooked white or brown rice

1 lb boneless, skinless chicken breasts, diced

2 cups fresh broccoli florets (or frozen, thawed)

1 cup cheddar cheese, shredded (divided)

1 cup cream of chicken soup (store-bought or homemade)

1 cup milk

1/2 cup onion, diced

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon onion powder

1 teaspoon garlic powder

1/2 teaspoon paprika

1/2 cup breadcrumbs (optional, for topping)

2 tablespoons butter (melted, optional, for topping)

Preheat the Oven: Start by preheating your oven to 350°F (175°C) to prepare for baking.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken, followed by the salt, black pepper, onion powder, garlic powder, and paprika. Sauté for about 5-7 minutes, or until the chicken is cooked through and lightly browned. Once done, remove the skillet from heat and set the chicken aside.

      Prepare the Broccoli: If you're using fresh broccoli, steam the florets for 3-5 minutes until they're tender but still maintain their vibrant green color. For frozen broccoli, ensure it’s completely thawed and any excess water is drained.

        Combine Ingredients: In a large mixing bowl, combine the cooked rice, sautéed chicken, steamed broccoli, cream of chicken soup, milk, half of the shredded cheese, diced onion, and minced garlic. Mix everything thoroughly with a spoon or spatula until all ingredients are evenly combined.

          Transfer to Baking Dish: Grease a 9x13 inch baking dish with non-stick spray or butter. Pour the mixed ingredients into the dish, spreading it evenly across the surface.

            Add Toppings: Sprinkle the remaining shredded cheese generously over the top of the rice mixture. If desired, combine the breadcrumbs with the melted butter and sprinkle this mixture over the cheese for an added crunchy topping.
