1 pound ground beef

1 cup uncooked brown rice

1 can (15 oz) diced tomatoes with green chilies

1 cup beef broth

1 cup shredded cheddar cheese, divided

1 cup corn (fresh or frozen)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon ground cumin

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup bell peppers, diced (any color)

1/2 cup sour cream

2 tablespoons olive oil

Fresh parsley, chopped (for garnish, optional)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Sauté the Vegetables: In a large skillet, warm the olive oil over medium heat. Add the chopped onion and diced bell peppers. Sauté for about 5 minutes, or until the vegetables are softened. Then, add the minced garlic and sauté for an additional minute until fragrant.

      Cook the Ground Beef: Introduce the ground beef to the skillet, breaking it apart with a spatula. Cook until the beef is well browned and cooked through, approximately 7-10 minutes. Drain any excess fat from the skillet.

        Season the Mixture: Stir in the canned diced tomatoes, corn, paprika, cumin, salt, and pepper. Mix until all ingredients are well combined, allowing the flavors to meld.

          Incorporate Rice and Broth: In a separate bowl, combine the uncooked brown rice with the beef broth. Carefully pour this mixture into the skillet with the beef and vegetables, stirring to ensure even distribution.

            Add Creaminess and Cheese: Remove the skillet from the heat and mix in the sour cream until thoroughly combined. Fold in half of the shredded cheddar cheese, ensuring it's evenly spread throughout the mixture.
