Ingredients

1 lb (450g) elbow macaroni

1 lb (450g) ground beef

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) diced tomatoes (with juice)

2 cups (16 oz) shredded cheddar cheese, divided

1 cup (8 oz) cottage cheese

1 cup (240ml) beef broth

2 tablespoons Worcestershire sauce

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

¼ cup (60g) grated Parmesan cheese (for topping)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it’s ready for baking.

Cook the Pasta: In a large pot, fill with water and add a generous amount of salt. Bring the water to a boil. Once boiling, add the elbow macaroni and cook according to the package directions until al dente. Once done, drain the macaroni and set aside.

Brown the Beef: In a large skillet over medium heat, drizzle a little oil. Add the diced onion and minced garlic, sautéing for about 3-4 minutes until they become soft and fragrant. Next, add the ground beef to the skillet, breaking it apart as it cooks. Brown the beef thoroughly, then drain any excess fat.

Combine Ingredients: To the browned beef mixture, add the diced tomatoes (with their juice), beef broth, Worcestershire sauce, Italian seasoning, paprika, along with salt and pepper to your taste. Stir well and allow the mixture to simmer for about 5-7 minutes, letting the flavors meld together beautifully.

Mix In Cheeses: After simmering, remove the skillet from heat. Fold in the cooked macaroni, cottage cheese, and 1 cup of the shredded cheddar cheese until everything is evenly combined and coated.

Transfer to Baking Dish: Grease a 9x13 inch (23x33 cm) baking dish with cooking spray or butter. Carefully pour the macaroni and beef mixture into the baking dish, spreading it out evenly. Top with the remaining 1 cup of shredded cheddar cheese and sprinkle the grated Parmesan cheese over everything.

Bake: Cover the baking dish tightly with aluminum foil to retain moisture. Place it in the preheated oven and bake for 20 minutes. After 20 minutes, carefully remove the foil and continue baking for an additional 15 minutes, or until the cheese has melted, bubbled, and is lightly golden.

Garnish & Serve: Once baked, take the dish out of the oven and let it rest for about 5 minutes to set. Before serving, garnish with freshly chopped parsley for a pop of color and flavor.
