Ingredients

1 lb (450g) ground beef

3 cups fresh broccoli florets

1 medium onion, diced

3 cloves garlic, minced

1 cup shredded cheddar cheese

½ cup beef broth

2 tablespoons soy sauce

1 tablespoon cornstarch, mixed with 2 tablespoons water

1 tablespoon olive oil

1 teaspoon paprika

½ teaspoon black pepper

¼ teaspoon red pepper flakes (optional for heat)

Salt to taste

Cooked rice or quinoa, for serving (optional)

Instructions

Heat the Skillet: In a large skillet, warm the olive oil over medium heat. Once the oil is shimmering, add the diced onion. Sauté for about 2-3 minutes, or until the onion is soft and translucent. Stir in the minced garlic and cook for an additional minute, just until fragrant.

Brown the Beef: Increase the heat to medium-high. Add the ground beef to the skillet, using a spatula to break it apart as it cooks. Brown the beef for about 5-7 minutes, stirring occasionally, until it is no longer pink. If there’s excess fat, drain it off.

Mix in Broccoli: Introduce the fresh broccoli florets to the skillet. Stir to evenly combine the ingredients, then pour in the beef broth and soy sauce. Sprinkle in the paprika, black pepper, and red pepper flakes if you’d like a bit of heat. Cover the skillet with a lid and let it steam for 3-4 minutes, or until the broccoli is tender but retains its vibrant color.

Thicken the Sauce: Remove the lid and create a well in the center of the skillet. Pour the cornstarch-water mixture into the well and stir everything together. Keep stirring until the sauce thickens slightly, which should take about 1-2 minutes. Taste and adjust the seasoning with salt if necessary.

Add the Cheese: Reduce the heat to medium-low, then sprinkle the shredded cheddar cheese over the beef and broccoli mixture. Gently stir until the cheese melts and is fully incorporated, resulting in a creamy, cheesy sauce that coats the dish beautifully.

Serve: For a complete meal, serve the cheesy beef and broccoli over cooked rice or quinoa. Feel free to garnish with additional cheese or fresh herbs like parsley for an extra touch. Enjoy this comforting and hearty dish!
