Cheesy Beef and Broccoli Rice Bowl

1 lb lean ground beef

2 cups fresh or frozen broccoli florets

1 cup jasmine or basmati rice

2 cups low-sodium beef broth

1 cup shredded cheddar cheese

1 tablespoon soy sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon olive oil

Salt and pepper to taste

Optional toppings: sliced green onions, toasted sesame seeds, or a splash of hot sauce

Instructions
 

Cook the Rice: In a medium saucepan, combine the jasmine or basmati rice with the beef broth. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15-20 minutes, or until the rice is tender and the broth is fully absorbed. Once cooked, remove from heat and fluff with a fork. Set aside.

    Sauté the Broccoli: In a large skillet, heat the olive oil over medium heat. Add the broccoli florets and sauté for 3-4 minutes until they turn bright green and are tender but still crisp. Once ready, transfer the broccoli to a plate and set aside.

      Brown the Ground Beef: In the same skillet, add the ground beef, breaking it apart with a spatula. Season it with salt, black pepper, garlic powder, and onion powder. Cook over medium-high heat for about 5-7 minutes, or until the beef is fully browned and cooked through, stirring occasionally.

        Combine Ingredients: Once the beef is browned, reduce the heat to low. Add the sautéed broccoli back to the skillet, then stir in the soy sauce and half of the shredded cheddar cheese. Mix everything together until the cheese melts completely and the ingredients are well combined.
