Cheesy Baked Egg and Spinach Nests

4 large eggs

2 cups fresh spinach, chopped

1 cup shredded cheese (cheddar or your favorite blend)

1/2 cup milk

1/4 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

4 whole wheat tortillas or large wraps

Olive oil spray for greasing

Fresh herbs for garnish (optional - parsley or chives)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it's hot and ready for baking.

    Prepare the Tortilla Nests: Lightly spray a muffin tin with olive oil to prevent sticking. Using a round cutter or the rim of a glass, cut the tortillas into circles large enough to fit the muffin cups. Carefully press each tortilla circle into the bottom and up the sides of the muffin molds, forming a nest shape.

      Sauté the Spinach: In a medium-sized skillet, add a drizzle of olive oil over medium heat. Once heated, add the chopped spinach along with the garlic powder, onion powder, salt, and pepper. Sauté for about 2-3 minutes, stirring occasionally, until the spinach has wilted down. Remove from heat and allow it to cool slightly.

        Combine the Filling: In a mixing bowl, combine the wilted spinach mixture with the shredded cheese (set aside some for topping), grated Parmesan cheese, and milk. Mix thoroughly until all ingredients are well combined and the mixture is creamy.

          Fill the Nests: Using a spoon, carefully fill each tortilla nest with the cheesy spinach mixture, ensuring to fill them about halfway full to allow space for the egg.
