Ingredients

1 ½ cups all-purpose flour

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon dried Italian herbs (a blend of oregano, basil, and thyme)

1 cup sharp cheddar cheese, shredded

½ cup sliced salami, finely chopped

½ cup diced cooked ham

¼ cup pepperoncini, chopped (or your favorite pickled vegetable)

2 large eggs, beaten

¾ cup milk (whole milk or buttermilk for additional moisture)

¼ cup olive oil

1 tablespoon honey (optional, for added sweetness)

Freshly cracked black pepper, to taste

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Prepare a muffin tin by lining it with paper liners or lightly greasing it with cooking spray to prevent sticking.

Combine Dry Ingredients: In a large mixing bowl, use a whisk to combine the all-purpose flour, baking powder, baking soda, salt, and dried Italian herbs. Mix well to ensure all dry ingredients are evenly distributed.

Incorporate Cheese and Meats: Add the shredded sharp cheddar cheese, finely chopped salami, diced cooked ham, and chopped pepperoncini to the dry mixture. Stir gently to coat all ingredients in the flour mixture, making sure they are evenly distributed throughout.

Mix Wet Ingredients: In a separate bowl, whisk together the beaten eggs, milk, olive oil, and honey (if using) until the mixture is smooth and combined.

Combine Mixtures: Carefully pour the wet mixture into the bowl of dry ingredients. Stir gently with a spatula until just combined; be cautious not to overmix. It's okay if the batter has a few lumps!

Fill Muffin Tins: Using a spoon or a scoop, fill each muffin cup approximately two-thirds full with the batter to allow for proper rising during baking.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean.

Cool and Serve: Once baked, allow the muffins to cool in the tin for about 5 minutes before carefully transferring them to a wire rack. Enjoy them warm or let them cool to room temperature.

Garnish (Optional): For an extra touch, consider sprinkling the tops with additional cheese or fresh herbs before serving for added flavor and visual appeal.
