Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup plain yogurt (or a dairy-free yogurt for a vegan alternative)

2 tablespoons tikka masala spice mix

1 tablespoon fresh lemon juice

4 tablespoons olive oil, divided

1 large onion, finely chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 can (14 oz) diced tomatoes, with juices

1 teaspoon garam masala

1 tablespoon sugar

Salt and black pepper to taste

1/2 cup coconut milk (optional for added creaminess)

Fresh cilantro, chopped, for garnish

Instructions

Marinate the Cauliflower: In a large mixing bowl, whisk together yogurt, tikka masala spice mix, lemon juice, salt, and black pepper until smooth. Add the cauliflower florets to the marinade, tossing gently to ensure each piece is evenly coated. Cover the bowl and refrigerate for at least 30 minutes (or up to 2 hours for maximum flavor infusion).

Roast the Cauliflower: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup. Spread the marinated cauliflower evenly on the sheet and drizzle with 2 tablespoons of olive oil. Roast in the preheated oven for approximately 25 minutes or until the cauliflower is tender and has a light char, flipping it halfway through for even roasting.

Prepare the Sauce: While the cauliflower roasts, heat the remaining 2 tablespoons of olive oil in a large skillet over medium heat. Add the finely chopped onion and sauté until it becomes soft and golden brown, which should take around 5-7 minutes.

Add Aromatics: Stir in the minced garlic and ginger, cooking for an additional 2 minutes until they release their fragrant aroma.

Create the Base: Pour the diced tomatoes into the skillet along with the garam masala and sugar. Combine well and let the mixture simmer for about 10 minutes, allowing the flavors to develop and meld.

Add Creaminess (Optional): If you desire a richer sauce, lower the heat and stir in the coconut milk. Allow it to warm through for an additional 5 minutes.

Combine: Once the cauliflower is done roasting, carefully add it to the skillet with the sauce. Gently stir to coat the florets in the sauce, and let it simmer together for another 5 minutes to meld the flavors.

Serve: Taste the dish and adjust the seasoning with additional salt and pepper, if necessary. Garnish generously with fresh chopped cilantro before serving.

Pairing Suggestions: Enjoy this savory cauliflower tikka masala with fluffy steamed basmati rice, warm naan, or roti, complemented by a refreshing side of raita for a well-rounded meal.
