For the crust:

1 1/4 cups all-purpose flour

1/4 teaspoon salt

1/2 cup unsalted butter, chilled and diced

1/4 cup ice water

For the filling:

2 cups pumpkin puree (canned or fresh)

2 medium sweet onions, thinly sliced

2 tablespoons olive oil

2 tablespoons brown sugar

1 teaspoon dried sage

1/2 teaspoon dried thyme

1/2 teaspoon ground nutmeg

1/2 teaspoon ground cinnamon

1/2 cup heavy cream

2 large eggs

Salt and pepper to taste

1/2 cup grated Parmesan cheese (optional for extra depth of flavor)

Instructions
 

Make the crust:

    - In a mixing bowl, whisk together the flour and salt. Add the diced butter to the bowl and, using a pastry cutter or your fingertips, blend until the mixture resembles coarse crumbs with pea-sized pieces of butter remaining.

      - Gradually pour in the ice water, stirring gently until the dough begins to come together. Do not over-mix. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes to firm up.

        Caramelize the onions:

          - Heat olive oil in a skillet over medium heat. Add the thinly sliced onions, stirring occasionally. Cook for about 15 minutes, or until they start to soften.

            - Sprinkle the brown sugar over the onions and continue cooking, stirring often, for an additional 10 minutes until the onions become golden brown and caramelized. Season with salt and pepper, then remove from heat and set aside to cool.

              Prepare the filling:

                - In a large mixing bowl, combine the pumpkin puree, heavy cream, eggs, sage, thyme, nutmeg, cinnamon, and a pinch of salt and pepper. Whisk until smooth and well blended. Gently fold in half of the caramelized onions, ensuring an even distribution.

                  Assemble the tart:

                    - Preheat your oven to 375°F (190°C).
