2 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

1 tablespoon olive oil

Salt and pepper, to taste

For the Grits:

1 cup stone-ground grits

4 cups chicken broth (or water)

1 cup shredded sharp cheddar cheese

1/4 cup heavy cream

2 tablespoons unsalted butter

Salt and pepper, to taste

For the Waffle Batter:

2 cups all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

2 large eggs

1 3/4 cups milk

1/2 cup melted butter

1 teaspoon vanilla extract

For Garnish:

2 tablespoons chopped fresh parsley

Hot sauce (optional)

Instructions
 

Prepare the Chicken:

    - In a bowl, combine Cajun seasoning, olive oil, salt, and pepper. Rub this mixture evenly over the chicken breasts until well coated. Let the chicken marinate for at least 30 minutes to allow the flavors to intensify.

      Cook the Grits:

        - In a saucepan, bring the chicken broth to a vigorous boil over medium-high heat. Gradually whisk in the grits, then reduce the heat to low. Stir occasionally and let cook for about 20-25 minutes until the mixture thickens and the grits are tender.

          - Once cooked, stir in the shredded cheddar cheese, heavy cream, unsalted butter, and season with salt and pepper. Keep warm over low heat while you prepare the rest of the dish.

            Make the Waffle Batter:

              - In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

                - In a separate bowl, beat together the eggs, milk, melted butter, and vanilla extract. Pour the wet mixture into the dry ingredients and gently stir until just combined. It’s okay if there are a few lumps—do not overmix.

                  Cook the Waffles:

                    - Preheat your waffle iron according to the manufacturer’s instructions. Pour enough batter into the iron to cover the surface without overflowing. Cook until the waffles are golden brown and crispy. Repeat this step until you have the desired number of waffles for stacking.

                      Cook the Chicken:

Cook for approximately 6-7 minutes on each side, or until the chicken is fully cooked and no longer pink in the center. Remove from the heat and let rest for a few minutes before slicing into strips.

Spread a generous layer of the cheesy grits on top, followed by a few slices of the seasoned Cajun chicken. Add another waffle on top and repeat the layering process until you have created a tall stack. Finish with a final layer of cheesy grits and cap it with the last waffle.
