2 pounds sweet potatoes, peeled and cubed

1/2 cup unsalted butter (1 stick), diced into small pieces

1/2 cup heavy cream

Cook the Sweet Potatoes: Place the cubed sweet potatoes in a large pot and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, reduce the heat to a simmer and cook the sweet potatoes for 15-20 minutes, or until they are fork-tender.
