4 medium-sized russet potatoes

4 tablespoons unsalted butter, melted

4 tablespoons extra virgin olive oil

6 cloves garlic, minced

2 teaspoons fresh rosemary, finely chopped

2 teaspoons fresh thyme leaves

1 teaspoon paprika

Salt and pepper, to taste

1/4 cup grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes: Start by preheating your oven to 425°F (220°C). Rinse the russet potatoes thoroughly under cold running water, ensuring you scrub away any dirt. After rinsing, use a clean towel to pat them dry completely.

    Slice the Potatoes: To slice the potatoes safely, position a potato between two chopsticks or the handles of wooden spoons. This will prevent you from cutting all the way through. Carefully make vertical slices in the potato, about 1/8 inch apart, being cautious not to cut all the way through to the base. Repeat this process with the remaining potatoes.

      Make the Garlic Herb Mixture: In a small mixing bowl, combine the melted butter, olive oil, minced garlic, finely chopped rosemary, thyme leaves, paprika, salt, and pepper. Whisk together until the mixture is well combined and fragrant.

        Coat the Potatoes: Place the sliced potatoes in a baking dish. Using a basting brush or spoon, generously coat the tops and sides of the potatoes with the garlic herb mixture. Ensure some of the mixture seeps between the slices of the potatoes. Set aside a small portion of the mixture for basting later during roasting.

          Roast the Potatoes: Cover the baking dish with aluminum foil to keep the moisture in, and place it in the preheated oven. Roast for 30 minutes. After this time, carefully remove the foil, then continue baking for an additional 20-30 minutes.
