Go Back
The origins of scones trace back to Scotland in the early 1500s, where they were initially made with oats and baked on a griddle. Over time, the scone has evolved, with variations spreading across the UK and beyond. By the 19th century, the traditional scone as we know it today began to emerge, thanks to the influence of baking powder, which allowed for a lighter, fluffier texture. Scones became a staple in English tea culture, often served with clotted cream and jam.

Ingredients

2 cups all-purpose flour

1/3 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, cold and cubed

1/2 cup dried cranberries

1 teaspoon freshly grated orange zest

1/2 cup buttermilk

1 large egg

1 teaspoon vanilla extract

For Egg Wash: 1 egg beaten with 1 tablespoon water

Optional Glaze: 1 cup powdered sugar + 2-3 tablespoons fresh orange juice

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking and for easy cleanup.

Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk the mixture thoroughly until all the dry ingredients are evenly blended.

Cut in the Butter: Add the cold, cubed unsalted butter into the flour mixture. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs, with some small pea-sized pieces remaining.

Incorporate Cranberries and Zest: Gently fold in the dried cranberries and the freshly grated orange zest, ensuring they are well-distributed in the flour mixture for a burst of flavor in every bite.

Prepare Wet Ingredients: In a separate bowl, whisk together the buttermilk, large egg, and vanilla extract until the mixture is smooth and homogenous.

Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Using a spatula, gently mix until just combined. The dough may appear a bit crumbly, which is perfectly fine. Avoid overworking the dough to keep the scones tender.

Shape the Scones: Lightly flour a clean surface, then transfer the dough onto it. Gently pat the dough into a circle about 1-inch thick. Using a sharp knife or pizza cutter, cut the circle into 8 equal wedges.

Apply Egg Wash: Carefully place the scones onto the prepared baking sheet. Brush the tops of each scone with the egg wash to achieve a beautiful golden color after baking.

Bake the Scones: Bake in the preheated oven for about 15-20 minutes, or until the tops are lightly golden brown and puffy.

Prepare the Optional Glaze: While the scones are baking, create the glaze by mixing the powdered sugar with the fresh orange juice in a small bowl until smooth.

Cool and Glaze: Once the scones are baked to perfection, remove them from the oven and allow them to cool slightly on the baking sheet. Drizzle the glaze over the warm scones to add an extra layer of sweetness and a citrusy kick.

Serve: Enjoy these delightful scones warm or at room temperature, paired with a cup of tea or coffee for a delightful treat!
