1 cup heavy cream

Prepare your pan: Start by lining an 8-inch square baking dish with parchment paper. Make sure to leave some overhang on the sides to make it easier to lift the fudge out later. Lightly grease the parchment paper with some butter to prevent sticking.

    Make the chocolate base: In a medium saucepan, combine the granulated sugar, unsweetened cocoa powder, heavy cream, and a pinch of salt. Place the saucepan over medium heat and stir the mixture constantly. Continue stirring until it becomes smooth and begins to gently bubble.

      Incorporate the butter: Lower the heat to a simmer and add the pieces of unsalted butter into the chocolate mixture. Stir continuously until the butter is completely melted and fully combined into the mixture, creating a rich chocolate base.

        Cook the fudge mixture: Allow the fudge mixture to simmer for an additional 5-7 minutes. Keep an eye on it as you want to achieve the soft-ball stage, which is around 234°F (112°C) when measured with a candy thermometer. This step is crucial for achieving the perfect fudge texture.
