9 lasagna noodles

1 lb (450g) ground beef

1 small onion, finely diced

2 cloves garlic, minced

2 cups marinara sauce (divided)

1 ½ cups ricotta cheese

1 ½ cups shredded mozzarella cheese (divided)

½ cup grated Parmesan cheese (divided)

1 tsp dried Italian seasoning

1 tsp salt

½ tsp black pepper

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat Oven: Begin by preheating your oven to 375°F (190°C) so it’s ready for baking once you’ve assembled the roll-ups.

    Cook Lasagna Noodles: In a large pot, bring salted water to a boil. Carefully add the lasagna noodles and cook according to package instructions until al dente (firm to the bite). Once cooked, drain the noodles and lay them flat on a clean towel to prevent sticking.

      Prepare Beef Mixture: In a large skillet over medium heat, add the ground beef, diced onion, and minced garlic. Cook, stirring occasionally, until the beef is browned (about 5-7 minutes) and the onions are softened and translucent. Drain any excess fat from the skillet.

        Add Sauce and Seasoning: Stir in 1 cup of marinara sauce along with the Italian seasoning, salt, and black pepper into the beef mixture. Mix well and then remove the skillet from heat, allowing the mixture to cool slightly.

          Prepare Cheese Filling: In a mixing bowl, add the ricotta cheese, 1 cup of shredded mozzarella cheese, and half of the grated Parmesan cheese. Mix all ingredients together until completely smooth and well combined.

            Assemble the Roll-Ups: On each lasagna noodle, spread an even layer of the ricotta cheese mixture. Top it with a layer of the beef mixture. Starting from one end, carefully roll each noodle tightly to form a roll-up.

              Place in Baking Dish: In a 9x13 inch baking dish, spread 1 cup of marinara sauce evenly across the bottom. Arrange the lasagna roll-ups seam side down in the dish. Pour the remaining marinara sauce over the roll-ups and sprinkle with the leftover shredded mozzarella and Parmesan cheese.

                Bake: Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 25 minutes. After this time, carefully remove the foil and continue baking for an additional 10-15 minutes, or until the cheese on top is bubbly and golden brown.

                  Garnish and Serve: Once baked, allow the lasagna roll-ups to cool for about 5 minutes. Garnish with fresh basil leaves if desired for a pop of color and added flavor before serving.
