2 cups ripe tomatoes, diced

1 medium red onion, finely chopped

1 cucumber, peeled and diced

1 red bell pepper, diced

2 cups vegetable broth

1 cup balsamic vinegar

1 tablespoon honey or maple syrup

2 cloves garlic, minced

1 teaspoon fresh basil, chopped

1 teaspoon fresh oregano, chopped

Salt and freshly ground black pepper to taste

Extra virgin olive oil for drizzling

Prepare the Vegetables: In a large mixing bowl, combine the diced tomatoes, finely chopped red onion, peeled and diced cucumber, and diced red bell pepper. Stir the mixture well to combine and set aside for later.

    Make the Balsamic Mixture: In a separate bowl, add the balsamic vinegar, honey (or maple syrup), minced garlic, chopped basil, and chopped oregano. Use a whisk to blend the ingredients thoroughly, and season with salt and freshly ground black pepper to suit your taste.
