Ingredients

4 boneless, skinless chicken breasts

2 ripe peaches, pitted and sliced into wedges

1/2 cup balsamic vinegar

1/4 cup honey

2 tablespoons olive oil (plus more for cooking)

2 cloves garlic, finely minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and freshly ground black pepper, to taste

Fresh basil leaves for garnish (optional)

Instructions

Marinate the Chicken:

    - In a large mixing bowl, combine the balsamic vinegar, honey, olive oil, minced garlic, thyme, salt, and pepper. Whisk until well blended.

      - Add the chicken breasts to the marinade, ensuring they are completely coated. Cover the bowl with plastic wrap and allow the chicken to marinate for at least 30 minutes. For more flavor, marinate in the refrigerator for up to 2 hours.

        Prepare the Grill or Skillet:

          - Preheat your grill to medium-high heat. If using a skillet, heat it over medium heat and add a drizzle of olive oil to coat the bottom.

            Cook the Chicken:

              - Once preheated, remove the chicken from the marinade, setting the marinade aside for later use. Place the chicken breasts on the grill or skillet.

                - Cook for approximately 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C), and the chicken is nicely browned and cooked through.

                  Make the Peach Sauté:

                    - While the chicken is cooking, pour the reserved marinade into a small saucepan and heat over medium. Bring to a gentle simmer and cook for about 5 minutes until it has slightly thickened.

                      - Add the sliced peaches to the saucepan and continue to cook for 2-3 minutes, or until the peaches are warmed through but still firm.

                        Combine and Serve:

                          - Once the chicken is cooked, remove it from the heat and let it rest for a few minutes to retain its juices.

                            - Serve the chicken with the warm balsamic peach sauce drizzled generously over the top. Garnish with fresh basil leaves, if using.

                              Enjoy:

                                - This dish pairs beautifully with a side of quinoa, wild rice, or a fresh arugula salad for a light and delightful meal!

Presentation Tips: For an elegant touch, serve the chicken on a large platter and drizzle the peach sauce artistically, topping with torn basil leaves for a pop of color.
