Balsamic Grilled Portobello Burgers

4 large portobello mushrooms, stems removed

1/3 cup balsamic vinegar

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

4 whole-grain burger buns

4 slices of fresh mozzarella cheese

1 cup arugula

1 large tomato, sliced

Optional: pesto sauce for spreading

Instructions
 

Marinate the Mushrooms: In a mixing bowl, whisk together the balsamic vinegar, olive oil, minced garlic, dried oregano, dried basil, and a pinch of salt and pepper. Add the portobello mushrooms to the bowl, turning them to ensure they are evenly coated in the marinade. Cover the bowl with plastic wrap and allow the mushrooms to marinate for at least 30 minutes at room temperature, or refrigerate for up to 2 hours for a more intense flavor.

    Preheat the Grill: While the mushrooms are marinating, preheat your grill to medium-high heat. If you’re using a grill pan, heat it over medium heat on the stovetop.

      Grill the Mushrooms: Once the grill is hot, place the marinated portobello mushrooms on the grill with the gill side facing down. Grill the mushrooms for about 5-7 minutes, then carefully flip them over and grill for an additional 5-7 minutes until they are tender and show nice grill marks. In the last minute of grilling, add a slice of fresh mozzarella on top of each mushroom to allow it to melt slightly.

        Prepare the Buns: While grilling the mushrooms, lightly toast the whole-grain burger buns on the grill, keeping a close eye on them until they are golden brown.

          Assemble the Burgers: On the bottom half of each toasted bun, spread a thin layer of pesto sauce if you're using it. Top each bun with a grilled portobello mushroom garnished with melted mozzarella. Add a few slices of fresh tomato and a handful of arugula before placing the top half of the bun on each burger.

            Serve: Serve your burgers immediately while they’re hot, with a drizzle of additional balsamic vinegar over the top if desired. Pair with your favorite side dishes for a complete meal!
