Baked Zucchini Tomato Gratin

4 medium zucchinis, thinly sliced into rounds

3 large ripe tomatoes, thinly sliced into rounds

1 medium onion, finely chopped

3 cloves of garlic, minced

1 cup grated mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (preferably whole wheat)

4 tablespoons olive oil, divided

1 teaspoon dried Italian herbs (such as oregano, thyme, and basil)

Salt and pepper to taste

Fresh basil leaves for garnish

Preheat the Oven: Set your oven temperature to 375°F (190°C) to preheat while you prepare the ingredients.

    Sauté the Onion and Garlic: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion. Sauté for about 5 minutes, or until the onion becomes translucent. Introduce the minced garlic and sauté for an additional minute, until fragrant. Remove the skillet from heat and set aside.

      Layer the Vegetables: Prepare a greased baking dish and begin layering the sliced zucchini and tomatoes alternately. Start with a layer of zucchini, followed by a layer of tomato slices. Continue layering until all the slices are used, occasionally sprinkling some of the sautéed onion and garlic mixture between the layers. Season each layer generously with salt, pepper, and a light sprinkle of the dried Italian herbs for added flavor.

        Add Cheese: Once your layers are complete, sprinkle the grated mozzarella cheese and Parmesan cheese evenly over the top of the layered vegetables.
