Ingredients

2 medium zucchinis

1 cup panko bread crumbs

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

2 large eggs

¼ cup all-purpose flour

Cooking spray or olive oil for drizzling

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). To facilitate cleanup, line a baking sheet with parchment paper.

Prepare the Zucchinis: Rinse the zucchinis under cold water and dry them thoroughly. Trim the ends, then slice them into uniform sticks approximately ½ inch thick to resemble fries.

Set Up the Breading Station: Arrange three shallow dishes: fill the first with all-purpose flour, beat the eggs in the second dish until well mixed, and in the third dish combine the panko bread crumbs with the grated Parmesan, garlic powder, onion powder, smoked paprika, salt, and black pepper, mixing thoroughly.

Coat the Zucchini: Take one zucchini stick at a time and start by dredging it in the flour, shaking off any excess. Next, dip it into the beaten eggs, letting any excess egg drip off. Finally, roll the zucchini stick in the panko mixture, pressing down gently to ensure it adheres evenly.

Arrange on Baking Sheet: Lay the coated zucchini fries on the prepared baking sheet in a single layer, ensuring there is space between each fry to allow for even cooking. Lightly spray or drizzle with olive oil to promote crispiness as they bake.

Bake: Slide the baking sheet into the preheated oven and bake for 20-25 minutes or until they turn golden brown and crispy. About halfway through, flip the fries to guarantee even crispiness on both sides.

Serve: Once baked, remove the fries from the oven and let them cool for a few minutes. Serve them warm with your favorite dipping sauces such as marinara or garlic aioli for a tasty complement.
