Ingredients

12 oz spaghetti

1 pound ground beef or Italian sausage

1 small onion, finely diced

3 cloves garlic, minced

1 bell pepper, diced (any color)

28 oz can crushed tomatoes

15 oz can tomato sauce

1 tablespoon tomato paste

1 teaspoon sugar

1 teaspoon Italian seasoning

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon red pepper flakes (optional)

1 cup ricotta cheese

1 large egg

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

Fresh basil or parsley, for garnish

Instructions

Preheat Oven: Begin by preheating your oven to 350°F (175°C) to ensure it reaches the ideal baking temperature while you prepare the dish.

Cook Spaghetti: In a large pot, bring salted water to a rolling boil. Add the spaghetti and cook according to the package instructions until it reaches an al dente texture. Once cooked, drain the spaghetti in a colander and set aside.

Prepare Meat Sauce: In a large skillet over medium heat, add the ground beef or Italian sausage. Cook until browned, breaking it apart with a spatula as it cooks. Drain off any excess fat. To the skillet, add the diced onion, minced garlic, and diced bell pepper. Sauté these vegetables until they soften, which should take about 5 minutes.

Add Tomatoes: Stir in the crushed tomatoes, tomato sauce, and tomato paste. Then add the sugar, Italian seasoning, salt, black pepper, and optional red pepper flakes. Increase the heat slightly and bring the mixture to a gentle simmer. Allow it to cook for about 10 minutes, stirring occasionally to meld the flavors.

Mix Ricotta Filling: In a medium mixing bowl, combine the ricotta cheese with the egg and a pinch of salt. Stir until the mixture is smooth and creamy.

Assemble Dish: In a large baking dish, spread a thin layer of the meat sauce over the bottom. Next, layer half of the cooked spaghetti on top of the sauce. Follow with half of the ricotta cheese mixture, spreading it evenly, and then half of the remaining meat sauce. Repeat this layering process with the remaining spaghetti, ricotta mixture, and meat sauce for a beautiful, multi-layered dish.

Top with Cheese: Generously sprinkle the shredded mozzarella cheese and grated Parmesan cheese over the top layer of meat sauce to create a delicious cheesy crust.

Bake: Cover the baking dish tightly with aluminum foil to prevent excess browning. Bake in the preheated oven for 25 minutes. After that time, carefully remove the foil and continue baking for an additional 15 minutes, or until the cheese is bubbly and a lovely golden brown.

Garnish and Serve: After baking, remove the dish from the oven and let it rest for about 10 minutes to set, making it easier to serve. Before serving, garnish with fresh basil or finely chopped parsley for a pop of color and added freshness.
