Ingredients

2 cups rolled oats

1 teaspoon baking powder

½ teaspoon ground cinnamon

¼ teaspoon salt

2 cups almond milk (or your preferred milk)

¼ cup pure maple syrup (or honey)

2 large eggs

1 teaspoon vanilla extract

2 ripe peaches, diced (or 1 can of sliced peaches, drained and rinsed)

½ cup chopped pecans (optional)

¼ cup brown sugar (for topping)

¼ teaspoon ground nutmeg (for topping)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a muffin tin by greasing it lightly with cooking spray or lining it with muffin liners to ensure easy removal of the cups once baked.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, and salt. Whisk all the dry ingredients together until they are evenly mixed.

Prepare Wet Ingredients: In a separate bowl, whisk together the almond milk, maple syrup, eggs, and vanilla extract until they are thoroughly combined and frothy.

Combine Mixtures: Gradually pour the wet mixture into the bowl with the dry ingredients. Stir gently until just combined, being careful not to overmix. Fold in the diced peaches and chopped pecans (if using) with a spatula until evenly distributed throughout the mixture.

Fill Muffin Tins: Using a spoon or a ladle, evenly distribute the oatmeal mixture into the prepared muffin tin. Fill each cup about ¾ full to allow room for rising.

Add Toppings: In a small bowl, combine the brown sugar and ground nutmeg. Sprinkle this mixture generously over the tops of the filled oatmeal cups to create a sweet, caramelized topping during baking.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted in the center of a cup comes out clean.

Cool and Serve: Once baked, remove the muffin tin from the oven and let it cool for about 10 minutes. Carefully remove the oatmeal cups from the tin, and serve them warm or at room temperature. Enjoy the delightful flavors of peach cobbler in a wholesome and portable form!
