Ingredients

200g (7 oz) pasta of your choice (penne or fusilli are fantastic options)

200g (7 oz) block of feta cheese

300g (10.5 oz) cherry tomatoes

3 cloves garlic, minced

1/4 cup extra virgin olive oil

1/2 teaspoon red pepper flakes (optional, for a hint of heat)

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to create a perfect baking environment for our dish.

Prepare the Ingredients: In a large, oven-safe baking dish, place the block of feta cheese in the center. Evenly scatter the cherry tomatoes and minced garlic around the feta. Drizzle everything generously with olive oil, and season with red pepper flakes (if you like some spice), salt, and freshly cracked black pepper.

Bake: Place the baking dish into the preheated oven and let it bake for about 25-30 minutes. You’ll know it’s ready when the feta is golden and the cherry tomatoes are bursting with juices.

Cook the Pasta: While the feta and tomatoes are baking, bring a large pot of salted water to a boil. Cook the pasta according to the package instructions, usually around 8-10 minutes for al dente. Before draining, be sure to reserve about 1/2 cup of the starchy pasta water. Drain the pasta and set it aside.

Create the Sauce: Once you pull the baking dish from the oven, take a fork and mash the baked feta together with the roasted tomatoes. This will create a creamy, flavorful sauce. If the sauce feels too thick, gradually mix in the reserved pasta water, a little at a time, until you reach your desired sauciness.

Combine Everything: Add the cooked pasta to the baking dish and use a pair of tongs or a large spoon to gently toss everything together, ensuring each piece of pasta is coated in the luscious sauce.

Serve and Garnish: Transfer your beautifully combined pasta to serving plates or a large communal dish. Garnish with fresh basil leaves and, if you wish, a generous sprinkle of grated Parmesan cheese for added flavor. Serve hot and savor the comforting goodness of your Baked Feta Pasta!
