Prepare the Sweet Potato: Preheat your oven to 375°F (190°C). Prick the sweet potato with a fork and bake it in the oven for 45-60 minutes, or until soft. Once cooled, scoop out the flesh and mash it. You should have about 1 cup of mashed sweet potato.
Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, garlic powder, and onion powder until well combined.
Combine Wet Ingredients: In another bowl, mix the melted butter, egg, milk, and the mashed sweet potato until smooth.
Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. Gently fold in the shredded cheddar cheese until evenly distributed.
Prepare the Pan: Grease a loaf pan with some butter or cooking spray. You can also line it with parchment paper for easier removal.
Transfer the Dough: Pour the bread mixture into the prepared loaf pan, smoothing the top with a spatula. If desired, sprinkle extra cheese on top for an extra cheesy crust.
Bake: Bake in the preheated oven for about 40-45 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
Cool and Serve: Once done, remove the bread from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely. Slice and garnish with fresh chives before serving.
