Ingredients
  

  • 1.0 cup mashed sweet potato
  • 2.0 cups all-purpose flour
  • 1.0 tablespoon baking powder
  • 0.5 teaspoon salt
  • 1.0 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 1.0 cup shredded sharp cheddar cheese
  • 3.0 tablespoons unsalted butter, melted
  • 1.0 large egg
  • 0.75 cup milk
  • 2.0 tablespoons fresh chives, finely chopped

Instructions
 

  • Prepare the Sweet Potato: Preheat your oven to 375°F (190°C). Prick the sweet potato with a fork and bake it in the oven for 45-60 minutes, or until soft. Once cooled, scoop out the flesh and mash it. You should have about 1 cup of mashed sweet potato.
  • Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, garlic powder, and onion powder until well combined.
  • Combine Wet Ingredients: In another bowl, mix the melted butter, egg, milk, and the mashed sweet potato until smooth.
  • Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. Gently fold in the shredded cheddar cheese until evenly distributed.
  • Prepare the Pan: Grease a loaf pan with some butter or cooking spray. You can also line it with parchment paper for easier removal.
  • Transfer the Dough: Pour the bread mixture into the prepared loaf pan, smoothing the top with a spatula. If desired, sprinkle extra cheese on top for an extra cheesy crust.
  • Bake: Bake in the preheated oven for about 40-45 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  • Cool and Serve: Once done, remove the bread from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely. Slice and garnish with fresh chives before serving.
