¼ cup maple syrup or honey

2 medium apples, peeled, cored, and diced (approximately 2 cups)

¼ cup chopped walnuts or pecans (optional, for added crunch)

½ teaspoon vanilla extract

Instructions
 

Preheat your oven to 350°F (175°C). Grease a standard 12-cup muffin tin with non-stick spray or line it with paper liners to make removal easier after baking.

    In a large mixing bowl, thoroughly combine the rolled oats, baking powder, ground cinnamon, and salt. Ensure that the dry ingredients are evenly mixed for consistent flavor throughout the cups.

      In a separate bowl, whisk together the milk, eggs, applesauce, maple syrup (or honey), and vanilla extract until you achieve a smooth and uniform mixture.

        Pour the wet mixture into the bowl with the dry ingredients. Stir gently but thoroughly until everything is well combined and no dry oats remain.
