Bacon & Potato Breakfast Casserole

8 slices of thick-cut bacon, chopped

1 large onion, finely diced

2 cloves garlic, minced

4 cups frozen hash brown potatoes (or fresh, grated potatoes)

1 ½ cups shredded cheddar cheese

½ cup milk

6 large eggs

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon smoked paprika (optional, for added flavor)

2 green onions, thinly sliced (for garnish)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Prepare a 9x13-inch baking dish by greasing it generously with cooking spray or a thin layer of butter to prevent sticking.

    Cook the Bacon: In a large skillet set over medium heat, add the chopped bacon. Cook, stirring occasionally, until the bacon is crispy and browned, about 7-10 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate to drain excess grease, leaving about 1 tablespoon of the bacon fat in the skillet.

      Sauté the Onion and Garlic: In the same skillet with the reserved bacon grease, add the diced onion. Sauté for approximately 4-5 minutes, or until the onion becomes soft and translucent. Next, add the minced garlic and continue to cook for an additional minute, stirring frequently to prevent the garlic from burning.

        Combine Ingredients: In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, and smoked paprika until smooth. Add in the cooked bacon, sautéed onion, garlic, and hash brown potatoes. Mix well until all ingredients are thoroughly combined. Reserve ½ cup of the shredded cheddar cheese for topping the casserole.
