Ingredients

12 oz (340g) penne pasta

2 cups broccoli florets

1 cup sliced bell peppers (mix of red and yellow for color)

1 cup fresh baby spinach

1 can (14.5 oz) diced tomatoes, well-drained

1 can (15 oz) white beans, rinsed and mashed to a creamy texture

2 cups marinara sauce (store-bought or homemade)

1 teaspoon dried oregano

1 teaspoon garlic powder

1/2 teaspoon red pepper flakes (adjust according to heat preference)

2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and black pepper to taste

2 tablespoons olive oil

Fresh basil or parsley for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it’s ready for baking once the pasta bake is assembled.

Cook the Pasta: In a generous pot, bring salted water to a rolling boil. Add the penne pasta and cook according to package instructions until al dente, typically around 8-10 minutes. Once cooked, drain the pasta and set it aside.

Sauté the Vegetables: Using the same pot, heat the olive oil over medium heat. Add the broccoli florets, sliced bell peppers, and baby spinach. Sauté the vegetables for about 5 minutes, stirring occasionally, until they soften yet retain their vibrant color. Once tender, remove the pot from the heat.

Combine the Ingredients: In a large mixing bowl, combine the drained pasta, sautéed vegetables, drained diced tomatoes, mashed white beans, marinara sauce, dried oregano, garlic powder, and red pepper flakes. Season the mixture generously with salt and black pepper. Stir everything together until well combined, ensuring the pasta is evenly coated with the sauce and vegetables.

Layer the Bake: Grease a 9x13 inch (23x33 cm) baking dish with a little oil or cooking spray. Transfer the combined pasta mixture into the dish, spreading it out evenly. Generously top the mixture with shredded mozzarella cheese and sprinkle on the grated Parmesan cheese for an extra layer of flavor.

Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes. You're looking for the cheese to be melted and bubbly, with the edges starting to turn a lovely golden brown.

Garnish and Serve: Once the pasta bake is done, remove it from the oven and allow it to cool for a few minutes before serving. If desired, garnish with fresh basil or parsley to add a pop of color and freshness. Serve warm and enjoy a deliciously cheesy delight!

                Prep Time: 15 minutes | Total Time: 50 minutes | Servings: 6-8

Presentation Tips: For an elegant touch, serve individual portions garnished with additional herbs and a sprinkle of cheese on top. A side salad makes a great complement!
