Ingredients

1 cup chocolate chip cookie dough (store-bought or homemade)

4 large flour tortillas

1/2 cup mini marshmallows

1/2 cup crushed graham crackers

1/2 cup peanut butter (or almond butter for an allergy-friendly option)

1/4 cup honey (optional, for added sweetness)

1/4 cup powdered sugar (for dusting, optional)

Cooking spray or butter for grilling

Instructions

Prepare the Dough: If using store-bought cookie dough, scoop out approximately 2 tablespoons for each quesadilla and roll them into small balls. For homemade dough, prepare according to your recipe and chill it in the refrigerator until firm to make handling easier.

Prepare the Tortilla: Place a flour tortilla on a clean, flat surface. Spread a thin layer of peanut butter evenly over one half of the tortilla.

Layer the Fillings: On the peanut butter-coated half of the tortilla, place 2 to 3 cookie dough balls. Top these with a generous handful of mini marshmallows and sprinkle the crushed graham crackers over everything.

Fold the Quesadilla: Gently fold the tortilla in half, covering the filling. Use your fingers to press down lightly along the edges to help seal it.

Cook the Quesadilla: Preheat a skillet over medium heat and lightly grease it with cooking spray or a small pat of butter. Carefully place the quesadilla in the skillet and cook for about 3-4 minutes, or until the bottom turns golden brown and is slightly crispy.

Flip & Finish Cooking: Using a spatula, gently flip the quesadilla. Cook the other side for another 3-4 minutes, making sure the cookie dough inside melts and the marshmallows begin to ooze out.

Add Sweetness: Once cooked, transfer the quesadilla to a plate. If desired, drizzle a little honey over the top and dust with powdered sugar for an extra touch of sweetness.

Slice & Serve: Allow the quesadilla to cool for a minute. Slice it into wedges and serve warm alongside fresh fruit or a glass of milk, creating the perfect after-school snack!
