2 tablespoons chopped fresh chives or green onions

Salt and pepper, to taste

4 large whole wheat or spinach tortillas

Leafy greens (such as spinach, arugula, or lettuce), for serving

Cook the Eggs: Place the eggs in a medium saucepan and cover them with cold water, ensuring the water rises about an inch above the eggs. Bring the water to a boil over medium-high heat. Once boiling, turn off the heat, cover the pot, and let the eggs sit for 9-12 minutes. After this time, carefully transfer the eggs to an ice bath (a bowl of ice water) to cool for about 5 minutes.

    Prepare the Avocado Mixture: While the eggs cool, slice the avocado in half, remove the pit, and scoop the flesh into a mixing bowl. Use a fork to mash the avocado until it reaches a smooth, creamy consistency.
