Ingredients

6 large eggs

1 ripe avocado

2 tablespoons mayonnaise

1 teaspoon Dijon mustard

1 teaspoon fresh lime juice

1/4 teaspoon garlic powder

Salt and black pepper to taste

1/4 teaspoon smoked paprika (plus extra for garnish)

Fresh cilantro leaves for garnish

Instructions

Boil the Eggs: Place the six large eggs in a medium saucepan and cover them completely with cold water. Heat the saucepan on medium-high until the water reaches a rolling boil. Once boiling, cover the pan with a lid, remove it from the heat, and let the eggs sit for 10-12 minutes, allowing them to cook gently in the residual heat.

Cool the Eggs: After the eggs have finished cooking, carefully transfer them to a bowl filled with ice water. Allow them to cool for about 5 minutes. This process will halt further cooking and make peeling easier.

Peel the Eggs: Once the eggs are cool, gently tap each one on a hard surface to crack the shell. Peel the shells off under cool running water to help eliminate any stubborn bits. After peeling, pat the eggs dry with a paper towel.

Prepare the Filling: Slice each peeled egg in half lengthwise, removing the yolks and placing them in a mixing bowl. To the bowl, add the ripe avocado, mayonnaise, Dijon mustard, fresh lime juice, garlic powder, and a sprinkle of salt and black pepper. Also, include 1/4 teaspoon of smoked paprika for added flavor.

Mix Together: Using a fork or an electric hand mixer, mash the egg yolks and avocado until you achieve a smooth, creamy consistency. Taste the filling mixture and adjust the seasoning with more salt, pepper, or lime juice if desired.

Fill the Eggs: Use a spoon or a piping bag fitted with a star tip to fill each egg white half with the creamy avocado mixture, ensuring each is generously filled for a delightful bite.

Garnish: Lightly sprinkle the filled eggs with extra smoked paprika for a beautiful finish. Top each egg half with a fresh cilantro leaf for an added touch of color and freshness.

Serve: Arrange your delicious avocado deviled eggs on a decorative serving platter. They can be enjoyed right away or refrigerated for up to 2 hours before serving for a cool treat.
