4 salmon fillets (6 oz each)

1/4 cup low sodium soy sauce

2 tablespoons honey

2 tablespoons rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon sriracha (optional, adjust to taste for spice)

For the Rice:

2 cups jasmine rice

4 cups water or chicken broth

1 tablespoon rice vinegar

1 teaspoon sesame oil

Salt to taste

For the Bowl:

1 cup shelled edamame

1 cup shredded carrots

1 cucumber, julienned

1 avocado, sliced

2 green onions, chopped

1 tablespoon toasted sesame seeds (for garnish)

Fresh cilantro (for garnish)

Instructions
 

Prepare the Marinade: In a medium mixing bowl, combine the soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, and sriracha (if desired). Whisk until well blended. Save about 2 tablespoons of the marinade to drizzle over the assembled bowls later.

    Marinate the Salmon: Place the salmon fillets in a shallow dish or a zip-top plastic bag. Pour the marinade over the salmon, ensuring each fillet is evenly coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor infusion.

      Cook the Rice: Rinse the jasmine rice thoroughly under cold running water until the water becomes clear. In a medium saucepan, combine the rinsed rice with water or chicken broth. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and let it simmer for about 15 minutes or until the rice is tender and the liquid has been absorbed.
