Ingredients

1 cup all-purpose flour

2 tablespoons granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk

1 large egg

2 tablespoons melted butter

1 teaspoon vanilla extract

1 apple (Granny Smith or Honeycrisp recommended), peeled, cored, and diced

1 teaspoon cinnamon

1 tablespoon brown sugar

Maple syrup (for dipping)

Instructions

Prepare the Apple Filling: In a small bowl, combine the diced apple with cinnamon and brown sugar. Gently toss to ensure the apple pieces are well-coated. Set aside to allow the flavors to meld while you prepare the pancake batter.

Make the Pancake Batter: In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Whisk together until well blended.

Combine Wet Ingredients: In a separate medium bowl, whisk together the buttermilk, large egg, melted butter, and vanilla extract until the mixture is smooth and fully combined.

Mix Wet and Dry Ingredients: Pour the wet mixture into the dry ingredients. Using a spatula, gently stir until just combined—do not overmix; a few lumps are perfectly fine.

Incorporate Apples: Carefully fold the apple mixture into the pancake batter, making sure the apple pieces are evenly distributed throughout the mixture.

Cook the Pancakes: Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or non-stick cooking spray. Pour about 2-3 tablespoons of batter onto the skillet for each pancake. Let them cook until bubbles appear on the surface and the edges begin to set, approximately 2-3 minutes.

Flip and Finish Cooking: Gently flip each pancake and cook for an additional 2-3 minutes, or until they are golden brown on both sides. Once done, transfer the pancakes to a plate and keep warm while repeating the process with the remaining batter.

Serve: Stack the pancakes on a serving plate while they're still warm. Serve with a side of maple syrup for dipping. For an extra touch, consider adding a dollop of whipped cream or a light dusting of powdered sugar on top for added sweetness and flair!
