1 block (14 oz) firm tofu, drained and pressed

2 tablespoons soy sauce or tamari

1 tablespoon cornstarch

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

4 large whole wheat or spinach tortillas

1 cup shredded lettuce

1 cup diced tomatoes

½ cup sliced cucumbers

½ avocado, sliced

½ cup hummus or your favorite dressing (for spreading)

Instructions
 

Prepare the Tofu: Begin by slicing the pressed tofu into 1-inch cubes and transferring them to a mixing bowl. Drizzle with soy sauce or tamari and gently toss to ensure all the pieces are evenly coated. Allow the tofu to marinate for approximately 15 minutes to absorb the flavors fully.

    Coat the Tofu: In a separate bowl, combine the cornstarch, garlic powder, onion powder, smoked paprika, and a pinch of salt and pepper. Take the marinated tofu cubes and toss them in the cornstarch mixture until they are fully and evenly coated.

      Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) by running it for about 5 minutes, which helps achieve that perfect crisp.

        Air Fry the Tofu: Lightly spray the air fryer basket with oil to prevent sticking. Carefully arrange the coated tofu cubes in a single layer in the basket, ensuring they don’t overlap (you may need to fry them in batches). Lightly mist the tops of the tofu with oil to enhance their crispiness and air fry for 12-15 minutes. Shake the basket halfway through cooking to ensure even crisping. The tofu should be golden and crispy when done.

          Prepare the Wraps: While the tofu is cooking, take your tortillas and spread a generous layer of hummus or your preferred dressing on each one, making sure to cover the surface evenly.

            Assemble the Wraps: Once the tofu has finished cooking, remove it from the air fryer and let it cool for a couple of minutes. On each tortilla, layer a portion of the crispy tofu, followed by a handful of shredded lettuce, diced tomatoes, cucumber slices, and avocado.

              Wrap and Serve: To create your wraps, tightly roll each tortilla, folding in the sides as you go to secure the fillings inside. If you prefer, cut the wraps in half for easier eating. Serve with extra hummus or dressing on the side for dipping.
