2 cups water

1 cup white vinegar

2 tablespoons salt

1 tablespoon sugar

2 cloves garlic, smashed

1 tablespoon mustard seeds

1 tablespoon dill seeds or 1/4 cup fresh dill sprigs, loosely packed

Optional: red pepper flakes, to taste for a hint of spice

Prepare the Green Beans: Rinse the fresh green beans thoroughly under cold water. Trim both ends of each bean with a sharp knife. Aim for uniform length, ideally about 4 to 5 inches, to ensure even pickling.

    Boil the Brine: In a medium-sized saucepan, mix the water, white vinegar, salt, and sugar. Place the saucepan over medium-high heat and bring the mixture to a vigorous boil, stirring frequently until the salt and sugar have completely dissolved.

      Add Flavor: Once the brine reaches a rolling boil, add the smashed garlic cloves, mustard seeds, dill seeds (or fresh dill sprigs), and red pepper flakes if you’re opting for a spicy kick. Allow the mixture to simmer gently for approximately 1 minute, allowing all the flavors to meld together.
