Ingredients

For the Salmon:

4 salmon fillets (6 oz each)

2 tablespoons extra virgin olive oil

2 tablespoons freshly squeezed lemon juice

2 teaspoons lemon zest (from about 1 lemon)

2 tablespoons fresh parsley, finely chopped

2 teaspoons fresh dill, finely chopped

1 teaspoon garlic powder

Salt and freshly cracked black pepper, to taste

For the Veggies:

1 cup cherry tomatoes, halved

1 medium zucchini, sliced into half-moons

1 red or yellow bell pepper, sliced into strips

1 cup broccoli florets

1 tablespoon extra virgin olive oil

Salt and freshly cracked black pepper, to taste

Optional: Fresh herbs for garnish, such as basil or extra parsley

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure it is hot and ready.

Prepare the Marinade: In a medium mixing bowl, whisk together the extra virgin olive oil, freshly squeezed lemon juice, lemon zest, chopped parsley, chopped dill, garlic powder, and a pinch of salt and pepper. This vibrant mixture will infuse the salmon with a zesty flavor.

Marinate the Salmon: Place the salmon fillets in a large resealable plastic bag or a shallow glass dish. Pour half of the prepared marinade over the salmon, making sure each fillet is well-coated. Seal the bag or cover the dish and allow the salmon to marinate for about 10 minutes while you prepare the vegetables.

Prepare the Veggies: In a large mixing bowl, combine the halved cherry tomatoes, sliced zucchini, bell pepper strips, and broccoli florets. Drizzle with the tablespoon of extra virgin olive oil, season with salt and pepper, and toss until all the vegetables are well-coated.

Arrange in a Baking Dish: On a large baking sheet lined with parchment paper, spread the marinated vegetables in a single layer on one side. Remove the salmon fillets from the marinade (discard the remaining marinade for safety) and place them skin-side down on the opposite side of the sheet.

Bake: Transfer the baking sheet to the preheated oven. Bake for approximately 12-15 minutes, or until the salmon is opaque and flakes easily with a fork (ideal internal temperature is 145°F/63°C) and the vegetables are tender and slightly caramelized.

Serve: Once baked, remove the sheet from the oven. If desired, garnish the salmon and veggies with additional fresh herbs for a pop of color and flavor. Serve hot and relish the delightful, zesty combination!
