1 lb large shrimp, peeled and deveined

3 tablespoons olive oil, divided

4 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

¼ teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

¼ cup fresh parsley, chopped

Grated Parmesan cheese, for serving

Cook the Pasta: In a large pot, bring generously salted water to a rolling boil. Add the linguine or spaghetti and cook according to the package instructions until al dente (tender but still firm to the bite). Before draining, reserve about ½ cup of the pasta cooking water for later use. Drain the pasta and set aside.

    Sauté the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the shrimp in a single layer. Season the shrimp with salt, black pepper, and red pepper flakes. Cook for around 2-3 minutes per side, until the shrimp turn pink and opaque. Once cooked, remove the shrimp from the skillet and set aside on a plate.
