1 pound large shrimp, peeled and deveined

1 cup uncooked jasmine rice

2 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 cup low-sodium chicken broth

1 cup cherry tomatoes, halved

1/4 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Cook the Rice: In a medium saucepan, combine the uncooked jasmine rice and chicken broth. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for approximately 15 minutes, or until the rice has absorbed all the liquid and is tender. Once cooked, remove from heat and let it sit, covered, for an additional 5 minutes. Fluff the rice gently with a fork to separate the grains.

    Prep the Shrimp: While the rice is cooking, take a moment to pat the shrimp dry using paper towels. Season the shrimp evenly with salt, pepper, and the fresh lemon zest, ensuring they are well coated.

      Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Once the oil is hot, add the minced garlic and sauté for about 30 seconds, or until fragrant. Be cautious to avoid burning the garlic, as it can turn bitter.
