1 lb (450g) boneless, skinless chicken breasts, diced into bite-sized pieces

1 cup long-grain white rice

2 cups chicken broth (low-sodium recommended)

1 cup heavy cream

1 medium onion, finely chopped

4 cloves garlic, minced

1 cup frozen peas and carrots (or your choice of vegetables)

1 teaspoon dried thyme

1 teaspoon dried oregano

½ teaspoon smoked paprika

Salt and black pepper to taste

1 cup sharp cheddar cheese, shredded

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it is hot and ready for baking.

    Sauté the Chicken: In a large, oven-safe skillet or saucepan, heat the olive oil over medium heat. Add the diced chicken pieces and season with salt, black pepper, smoked paprika, dried thyme, and dried oregano. Sauté for about 5-7 minutes, or until the chicken is lightly browned and just cooked through. Once done, remove the chicken from the skillet and set aside.

      Cook the Aromatics: In the same skillet, add the finely chopped onion and minced garlic. Sauté for approximately 2-3 minutes until the onion becomes translucent and fragrant, ensuring the garlic does not burn.

        Combine Ingredients: Stir in the long-grain white rice, chicken broth, heavy cream, and frozen peas and carrots. Increase the heat slightly and bring the mixture to a gentle simmer.
