2 cups cooked chicken, shredded (rotisserie chicken is a great choice)

1 cup BBQ sauce (select your favorite brand for flavor)

1 ½ cups shredded cheddar cheese

1 cup shredded mozzarella cheese

4 large flour tortillas

¼ cup red onion, thinly sliced

½ cup corn (either canned or frozen)

2 tablespoons olive oil

Fresh cilantro, for garnish (optional)

Sour cream or Greek yogurt, for serving

Prep the Chicken: In a medium-sized mixing bowl, combine the shredded chicken with the BBQ sauce. Stir until the chicken is thoroughly coated with the sauce. Feel free to adjust the amount of BBQ sauce according to your taste preferences.

    Heat the Skillet: Place a large skillet over medium heat and add 1 tablespoon of olive oil. Allow the oil to heat properly before adding the tortillas.

      Assemble the Quesadillas:

        - Lay one tortilla flat in the heated skillet. On top of it, layer a generous amount of the BBQ chicken mixture, followed by a sprinkle of red onion, corn, and a mix of both cheeses (cheddar and mozzarella).

          - Carefully place a second tortilla on top, creating a quesadilla.
